Chimichuri Sauce
Ingredients
- 1 cup Coriander leaves , wash, coarsely chop
- 1 cup Parsley , wash coarsely chop
- 1 tbsp Oregano (dried)
- 2 tbsp Onion – chopped
- 8-10 nos. Garlic cloves
- 2-3 tbsp Red vinegar
- 2-3 tbsp Lemon juice
- 1 tbsp Chili flakes
- 2 nos. Green chilies
- ½ White pepper
- ½-¾ cup Olive oil
- 1 tbsp Almond, powdered
- Salt-to-taste
Instructions
- Alternately, chop all the herbs and garlic-onion very finely and mix well adding the vinegar, lemon juice and olive oil
- Adjust the spice and tart/sour as per your taste
- Sauce can be stored in a glass container in the refrigerator for about a week
- Chimichuri can be used as an accompaniment or to braise
- 1/3rd of the total quantity of the sauce can be used in the above receipes
